A set of our four essential kitchen vinegars. 

These are an upgrade to the vinegar classics that are often found on recipe cards. These four vinegars are set in one of our custom boxes and include a recipe card.

Our vinegars are slow fermented using a process from the 1800s which we recreated in partnership with local universities.  After fermentation we age our vinegars in oak barrels and hand bottle every bottle.

Better Than Champagne Chardonnay Wine Vinegar

Size: 8.5oz glass bottle

Perfect For: Vinaigrettes, beurre blanc, finishing hot sauces, and mignonette for oysters.

Fermentation Base: Chardonnay

Base Origin: California

Taste Profile: The most delicate of our wine vinegars. Bright and clean acid with a slightly nutty layer.

California Junmai Rice Wine Vinegar

Fermentation Base: Junmai Sake

Base Origin: California

Taste Profile: Rich and round. Bolder than most rice vinegar.

Worth Waiting For

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

We create vinegars with flavor profiles that reflect a sense of place by working exclusively with American wines, ciders, and brews.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.

Fantastically fantastic.

I just received my second order, which I will be gifting to a bunch of my Holy Cross buddies. I taste tested my first batch of red wine, apple cider, sherry, and rice wine vinegar to what I was currently using and there was NO comparison. Threw the old stuff out. This is the best vinegar ever. My primary care guy, (originally from Worcester) is going to check it out as well, especially the cider vinegar. You are the best, and thanks for uplifting Worcester!

Disappointed

All of vinegars exceptionaly tart. Especially Rew wine and champagne. Did not like them at all. I was looking forward to a good red wine vinegar fell far short. Will use for cpoking or something but may just give them away. I am used to a vinegar I can take a shot of snd not make me pucker and wince. I thought they would be that type but no.

Good beginning selection

All for vinegars made wonderful vinegrettes, marinades and sweet/sour sauces. Only negative I can think of is they are very difficult to open!
