American Barrel California Sherry Vinegar brings a classic Spanish-style staple to your kitchen. You will taste bright acidity paired with a subtle, nutty undertone. We start with Palomino and Pedro Ximénez sherry wine aged in California oak for three years. Then we ferment the wine slowly and finish it inside 25-gallon American oak barrels. The double aging creates depth, smoothing out sharp edges while maintaining a lively snap.

Modern vinegar manufacturing rushes the process, stripping away real character. We chose to slow down by recreating an authentic fermentation system from 1823. Because early equipment no longer existed, we rebuilt our machinery alongside local university craftsmen. We craft our vinegar inside an old New England mill blacksmith shop, preserving tradition in every batch.

Frequently Asked Questions

What is sherry vinegar made of?

Our sherry vinegar is made from California sherry wine fermented from Palomino and Pedro Ximénez grapes.

Where to buy authentic barrel-aged sherry vinegar?

You can order directly from our online store. We ship raw, unfiltered bottles straight from our facility in New England.

Is 7% acidity too sharp for home cooking?

Sherry vinegars are naturally higher in acidity. However, our slow fermentation and double oak aging mellow the overall bite, yielding a balanced, bright flavor.

How do I store my California Sherry Vinegar?

Keep your bottle in a cool, dark pantry. Store it away from direct sunlight to preserve its complex taste profile.

Our Craft: A Modern Approach to a Traditional Art

Wooden fermentation vat and stainless steel tanks in facility — artisanal vinegar production

Great vinegars demand patience and precise conditions. We partner with local universities to custom rebuild 19th-century fermentation equipment, rejecting the rapid manufacturing methods of the 1900s. Our small-batch vinegars undergo two to three months of careful fermentation, followed by up to twelve months of aging in craft distillery oak barrels to develop rich, complex flavor profiles.

American Vinegar Works brick entrance with 'Vinegar Secrets' door, barrels, and a yellow hydrant.

We set out to challenge a market filled with mass-produced, industrial vinegars. Inspired by the incredible renaissance in American craft fermentation, we source quality regional wines, beers, and ciders to create thoughtfully made vinegars that transform everyday cooking and cocktails. Every bottle reflects our passion for authentic flavor, purposeful craftsmanship, and a forward-looking vision for your kitchen.
