Modern vinegar production has gone too far by sacrificing flavor for speed. We have gone a different way by embracing the value of time to revive an authentic production method from 1823. Because the original machinery no longer existed, we engineered and rebuilt our custom fermenter by consulting historical records and partnering with local university craftsmen. We brew our small batches inside a historic New England textile mill blacksmith shop that sits proudly on the National Register of Historic Places.

Frequently Asked Questions

What makes this different from standard rice vinegar?

Standard commercial rice vinegars club you over the head with acid or sugar. Our version is made with junmai-grade California sake, slow-fermented, and barrel-aged in American oak for a patient, gentle, and velvety finish.

Is it good for sushi rice?

Yes, it is exceptional for sushi rice. Its clean, layered tang provides the perfect structural balance without the harsh chemical bite of grocery store alternatives.

What’s the acidity?

It features a minimum acidity of 4.25%, carefully calibrated to provide a rounded, elegant culinary balance.

What sizes are available?

It is available in an 8.5 oz glass bottle (featuring a built-in, no-drip pourer) and a 32 oz glass bottle for pantry stocking.

Why is there sediment or cloudiness at the bottom of my glass bottle?

This is a natural characteristic of a high-quality product. Because this gourmet vinegar is kept raw, unfiltered, and unpasteurized, healthy living cultures settle naturally over time.

Our Craft: A Modern Approach to a Traditional Art

Wooden fermentation vat and stainless steel tanks in facility — artisanal vinegar production

Great vinegars demand patience and precise conditions. We partner with local universities to custom rebuild 19th-century fermentation equipment, rejecting the rapid manufacturing methods of the 1900s. Our small-batch vinegars undergo two to three months of careful fermentation, followed by up to twelve months of aging in craft distillery oak barrels to develop rich, complex flavor profiles.

American Vinegar Works brick entrance with 'Vinegar Secrets' door, barrels, and a yellow hydrant.

We set out to challenge a market filled with mass-produced, industrial vinegars. Inspired by the incredible renaissance in American craft fermentation, we source quality regional wines, beers, and ciders to create thoughtfully made vinegars that transform everyday cooking and cocktails. Every bottle reflects our passion for authentic flavor, purposeful craftsmanship, and a forward-looking vision for your kitchen.
