Our Craft: A Modern Approach to a Traditional Art
Great vinegars demand patience and precise conditions. We partner with local universities to custom rebuild 19th-century fermentation equipment, rejecting the rapid manufacturing methods of the 1900s. Our small-batch vinegars undergo two to three months of careful fermentation, followed by up to twelve months of aging in craft distillery oak barrels to develop rich, complex flavor profiles.
We set out to challenge a market filled with mass-produced, industrial vinegars. Inspired by the incredible renaissance in American craft fermentation, we source quality regional wines, beers, and ciders to create thoughtfully made vinegars that transform everyday cooking and cocktails.
