What is beer malt vinegar?

In our artisan vinegar range, beer malt vinegar is a distinctive and flavorful choice that we cherish for its robust character. We produce it by fermenting malted barley, which is also used in brewing beer, into a tangy vinegar through a careful aging process. This fermentation imparts a rich, malty flavor with complex notes of caramel and toasted grains, offering a unique twist compared to more conventional vinegars. We love incorporating beer malt vinegar into our culinary creations, where its depth and slightly sweet undertones add a hearty and nuanced dimension to marinades, sauces, and pickles. By using this artisanal vinegar, we infuse our dishes with a touch of craftsmanship and tradition that enhances the overall flavor profile.

Is this vinegar alcoholic?

When it comes to artisan vinegar, one common question we encounter is whether our vinegars are alcoholic. The answer lies in the fermentation process we carefully manage. Initially, the base ingredients, such as wine, cider, or malt, do contain alcohol. However, through the meticulous fermentation process, this alcohol is converted into acetic acid by acetic acid bacteria. By the time fermentation is complete, the alcohol content in our vinegar is typically negligible, often less than 0.5%, rendering it non-alcoholic by most standards. While traces of alcohol may remain, it is not enough to have any intoxicating effects. Thus, our artisan vinegars retain the rich, complex flavors developed from their alcoholic origins without actually being alcoholic themselves.

Worth Waiting For

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.

My Gran used to make her own vinegar. I remember she would pull the must off the top, pour our the vinegar, refill the jug and re-install the must. That was good vinegar! It was still sweet, had a flavor almost like pumpernickel and was still syrup-y. This brought the taste-visual memory back to me.

Porter Beer Malt Vinegar Makes a Great Beef Marinade

We used the Porter Beer Malt Vinegar in making a really great beef marinade.
A 1/3 cup of Porter Beer Malt Vinegar mixed with 2/3 cup of Extra Virgin Olive Oil. Add 1/2 teaspoon of cumin, a 1/2 teaspoon of allspice, a 1/2 teaspoon of coriander, and 1/2 teaspoon of minced garlic. Whisk the marinade thoroughly. Put the beef (we used a Chuck Roast) in a large ziplock plastic bag, pour in the marinade, seal the plastic bag and refrigerate for at least eight hours.
