It is slow fermented in small batches using a unique process from the early 1800s and aged in 25-gallon American oak barrels. Lighter than a red wine vinegar but with more body than a white wine vinegar our Pink Pacific Rose Wine Vinegar is extremely versatile.

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.

Our favorite vinegar ...

... even compared to the other fine vinegars from the American Vinegar Works. Delicate flavor, but strong enough to stand on its own when used, say, as a marinade for finely sliced Bermuda onions. Perfect with fresh salad vegetables; the best of the best is a salad of large fresh spinach leaves, roughly chopped and very lightly sprinkled with a touch of sugar and topped with a generous handful of halved strawberries - all under a shower of this rose vinegar.

I make a recipe of sliced cucumbers seasoned with store bought red wine vinegar and sour cream. This time I used your rose wine vinegar. The difference was amazing. No bitterness, just flavor. I’m hooked. I now need to purchase your red wine vinegar.

Wonderfully amazing flavor

I wasn't sure how this vinegar was going to work out. I replaced an apple cider vinegar with Pink Pacific Rose Wine Vinegar in a marinade for grilled chicken that I planned to use in several dishes. My family were amazed at how just a switch of one ingredient could make such a difference in the overall flavor of the chicken. I plan on using the Pink Pacific Rose Wine Vinegar and other flavors from American Vinegar Works from here on out! My cooking is greatly enhanced!!

Best vinegar I have vere tasted

I have only tried the apple cider vinegar and the red wine vinegar.
I loved the apple cider vinegar so much I immediately sent a large bottle to my friends in Florida. They have not received it yet, but I am sure he will love it.

Just a hint of Rose’ in this lovely vinegar

I tried this vinegar today on my tomato, feta, olive, red pepper, cucumber salad.

It was so tasty! Subtle and soft on my palate. Didn’t overwhelm the salad ingredients. I’ll definitely buy it again!
