Honey and vinegar. Opposites certainly do attract (us) in our first ever sweet and tangy mead vinegar. Honey wine, also known as mead, is an alcoholic beverage made by fermenting honey with water, sometimes with added fruits, spices, or herbs. With a rich history dating back to Viking and medieval times, it offers a sweet and aromatic drinking experience.
The honey notes are unmistakable in this barrel-aged, limited-edition vinegar which presents with a warm, hazy honeycomb glow from the unfiltered and raw honey.
Made with mead from Vermont and finished with raw clover honey after barrel aging this vinegar has us all abuzz!

Worth Waiting For
Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823. Our equipment doesn’t exist anymore so we remade it in partnership with local universities.
After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.
