Are your vinegars alcoholic?

When it comes to artisan vinegar, one common question we encounter is whether our vinegars are alcoholic. The answer lies in the fermentation process we carefully manage. Initially, the base ingredients, such as wine, cider, or malt, do contain alcohol. However, through the meticulous fermentation process, this alcohol is converted into acetic acid by acetic acid bacteria. By the time fermentation is complete, the alcohol content in our vinegar is typically negligible, often less than 0.5%, rendering it non-alcoholic by most standards. While traces of alcohol may remain, it is not enough to have any intoxicating effects. Thus, our artisan vinegars retain the rich, complex flavors developed from their alcoholic origins without actually being alcoholic themselves.

Modern vinegars have lost their way, so we stepped back in time to recreate a process from 1823.  Our equipment doesn’t exist anymore so we remade it in partnership with local universities.

After slow fermentation our vinegars are barrel aged before being hand bottled raw and unfiltered. It all takes a lot more time and care but we think the results are spectacular. I hope you will too.

 Our vinegar works is housed in the blacksmith shop for an old textile mill complex in the heart of New England that is on the National Register of Historic Places.
